Ingredients
- 2 cups Zucchini shredded
- 1 cup blueberries
- 2 cups brown sugar
- 1 cup oil
- 3 large eggs
- 1 tbsp vanilla extract
- 3 cups all-purpose flour
- 1 tbsp cinnamon powder
- 1 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
Directions
- Preheat oven to 350 degrees F.
- Gather all the ingredients
- Whisk eggs, oil, sugar and vanilla in a large mixing bowl
- Add shredded zucchini
- Sift flour, add cinnamon, salt, baking powder and baking soda, mix to combine
- Fold dry ingredients into the wet ingredients. fold in the blueberries
- Line muffin tins with paper
- Put batter in muffin tins. Make 24 muffins
- Bake for 30 minutes. test with toothpick
- Cool and serve
