• 3 Cups All Purpose Flour
  • 1 1/2 Cups Brown Sugar
  • 1/4 Cups Melted Butter
  • 1 tablespoon Baking Powder
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 teaspoon Cinnamon Powder
  • 1 teaspoon Salt
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Mixed spice
  • 1 tablespoon White Rum
  • 2 Cups Shredded Coconut
  • 1 1/2 Cups Coconut Milk

Directions:

  • Combine all dry ingredients in a large bowl
  • Mix the liquids in a separate jug
  • Add liquid to dry ingredients gradually
  • Do not over mix batter
  • Lightly grease Pyrex dish
  • Preheat oven at 350 degrees
  • Bake for 45 minutes
  • Cool then Serve
