- 3 Cups All Purpose Flour
- 1 1/2 Cups Brown Sugar
- 1/4 Cups Melted Butter
- 1 tablespoon Baking Powder
- 2 Eggs
- 1 teaspoon Vanilla
- 1 teaspoon Cinnamon Powder
- 1 teaspoon Salt
- 1/4 teaspoon Nutmeg
- 1/2 teaspoon Mixed spice
- 1 tablespoon White Rum
- 2 Cups Shredded Coconut
- 1 1/2 Cups Coconut Milk
Directions:
- Combine all dry ingredients in a large bowl
- Mix the liquids in a separate jug
- Add liquid to dry ingredients gradually
- Do not over mix batter
- Lightly grease Pyrex dish
- Preheat oven at 350 degrees
- Bake for 45 minutes
- Cool then Serve
