Ingredients

  • 2 cups Zucchini shredded
  • 1 cup blueberries
  • 2 cups brown sugar
  • 1 cup oil
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tbsp cinnamon powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Directions

  • Preheat oven to 350 degrees F.
  • Gather all the ingredients
  • Whisk eggs, oil, sugar and vanilla in a large mixing bowl
  • Add shredded zucchini
  • Sift flour, add cinnamon, salt, baking powder and baking soda, mix to combine
  • Fold dry ingredients into the wet ingredients. fold in the blueberries
  • Line muffin tins with paper
  • Put batter in muffin tins. Make 24 muffins
  • Bake for 30 minutes. test with toothpick
  • Cool and serve
